Carbon fiber is such a hi-tech material, that it's easy to forget how much handwork is required to work it.
In this video by European manufacturer Time Bicycles, some of the earlier production phases resemble leathermaking and cobbling more than bicycle making. As the build progresses it gets more hi-tech, with plenty of cool jigs and fixtures:

Once interesting approach is from Framework. There goal there is to remove the handwork from the process, while the overall construction might look antiquated (tubes and lugs), its all quite advanced: high precision machining (hes a tooling maker), bespoke wound tubes, etc etc. Fascinating instagram follow too.
