Knocking them together (or apart) requires a mallet. They're locked in place with simple wedges.
These are available in Oak, Ash, Walnut or Plane, and run €600-€800 (USD $652-$869) depending on the species. "We can produce models," writes the firm, "according to your preferences in dimensions and species."

How likely is it that the top surface will be completely flush like that in reality, after a season of moisture changes?
Gravity in this orientation is not going to help...Those wedges will be on the floor more often than in the slot.
Someone built one of these years back - I believe the picture was in Fine Homebuilding. It used dovetails angled in both directions so no wedges were required. These are much less elegant, and the price is slightly insane.
