The Air-Evacuating Airscape Coffee Canister

A plunger-style inner lid squeezes all the air out, right down to the level of coffee

Montana-based drinkware company Planetary Design created this Airscape Coffee Canister Classic, which features a cleverly-designed lid.

The canister is drawn stainless steel, not molded plastic, so there's no draft angle on the sidewalls; this means you can push the plunger-style lid down into the canister to the level of the coffee, forcing all of the oxygen out through a valve in the lid. Once you've reached maximum depth, you then flip the handle to seal the valve. It's essentially as close as you can get to vacuum-packing the darn thing.

There's also a second aesthetic lid you can use to cap the top.

The Airscape Coffee Canister Classic comes in nine colors and two sizes, 10 oz. ($24.80) and 1 lb ($36).

My wife came back with this, and while I was initially impressed at the beautifully molded clear outer lid, and yes it achieves all the stated functionality, it leaves me wondering: why not go the extra step and include a vacuum pump? No not a clunky, expensive, complex electric one - a simple, hand-pump like the wine vacuum pump I use whenever I don't finish a bottle of wine. Furthermore, why can't I buy a valve like that which I can just drill into any of my plastic or metal containers that I want to be vacuum sealed?

Coffee freak here, recently bought the larger canister and finding it to be just about perfect. There is an audible hiss from the valve that verifies the trick being done here, which is nice. The handle is robust, nicely sized, and dummy proof, even for pre-coffee fumbling.
